RECIPES. Paracotes
“Paracotes” are a traditional sweet food made with dry figs and covered with honey and then flour. They are usually served with a little wine during the traditional “Jota” songs. In fact their name is a popular distortion of the expression “per a les jotes”. Nowadays they are eaten at Christmas in some of the villages on the Ebre Delta.
Ingredients:
1 egg
1 grated lemon
3 tablespoons of sugar
1 small glass of anis
½ k flour
½ litre of soda water
dry figs (halved and opened)
honey
sunflower oil or zero degree olive oil
Instructions:
Beat the egg with the sugar and grated lemon. Add a small glass of anis and then the flour. Next pour in the soda water, mixing to make en even paste, not too thick and not too thin. Add the figs. Put plenty of oil in a frying pan, and when it is really hot, fry the figs. When they are golden in colour, turn them onto a plate and pour a little honey over the top.
