Arròs a banda (rice dish)
Ingredients:
1.5kg varied fish,
300g cuttlefish,
6 medium-sized potatoes,
2 tomatoes,
4 medium-sized onions,
Olive oil, saffron, salt, mild paprika,
2 litres water.
Directions:
Clean the fish. Clean the cuttlefish, chop and put aside. Clean and chop the potatoes and onions. Grate the tomatoes, chop the garlic and put aside. Fry the potatoes and onions in a little oil till golden. Add the paprika and two litres of water. Add a little salt. Cook on medium heat for thirty minutes. When the potatoes are almost cooked add fish and simmer for 15 minutes. Fry garlic in a pan with the cuttlefish, tomato and a little paprika. Stir, then add one and a half litres of fish stock. Add saffron. When this boils add rice, cook on high heat for 10 minutes. Take off heat and leave to rest. Serve with the fish, potates and onion in a large serving dish. Accompany with garlic mayonnaise.
