Brossat cake

"Brossat" cake has a base made with olive oil, flour, eggs, milk and sugar, which is covered with "Brossat" (fresh goat's cheese), which has previously been mixed with sugar, eggs and lemon peel, it is then cooked au gratin. This cake is not very thick, it's creamy and very mild in flavour. It is traditionally made in Tortosa and neighbouring villages.
